The Healthiest Instant Noodles – GreeNoodles

I’ve never met an Asian who doesn’t love noodles.  A good bowl of noodle soup not only warms your body but also temporarily defuses all your troubles.  When fresh noodles aren’t within reach, we turn to instant noodles.  Instant noodles have become the number one comfort food in Asia since Japan introduced them fifty years ago.  Just to give you an idea of how popular instant noodles are, the Japanese consider instant noodles their best invention, out ranking the Walkman, Karaoke and even their famous robots.   To better appreciate this delicious Asian sensation, visit any Asian supermarket, survey the hundreds of different brands of instant noodles, ask for some recommendations, and try a few flavors yourself.

The Healthiest Instant Noodles  

I consider myself lucky because I don’t have a sweet tooth and never developed a taste for junk food.  But instant noodles could be my downfall.  I know most instant noodles are deep fried and packed with sodium and preservatives, yet when I get hungry at night, when I’m on the road, when it’s cold out, when I’m trapped by a snowstorm in New York or a typhoon in Asia, I crave nothing more than a bowl of hot instant noodles.  Over the years, I’ve searched throughout Asia for healthy (and delicious!) noodles.  Finally, a half century since instant noodles were invented by a Taiwanese merchant in Japan, I’ve found the perfect product.  Mr. Sho Oga has created instant noodles that are low in fat, contain zero cholesterol, have no added preservatives, food coloring, MSG, eggs or animal products, and are packed with vitamins, minerals and fiber.  These noodles are made with unbleached and unprocessed wheat flour and organically grown Moroheiya.  Moroheiya (also called Egyptian spinach) is a super vegetable that is more nutritious than spinach, carrots or broccoli.  Instead of deep fried, GreeNoodles are air dried, which makes them especially healthy.  They’re even vegan and kosher.  And most important, they’re delicious, with a good chewy texture—think al dente pasta.  You can eat GreeNoodles as a quick snack or turn them into a complete meal.  GreeNoodles have five different flavors—I recommend Shitake and Soy Sauce, which is not only flavorful, but contains only 2% fat if you use the seasoning included in the package, 0% fat if you don’t.

Here are two different ways to make Shiitake and Soy Sauce GreeNoodles: one as a noodle soup and the other as dry noodles.

GreeNoodles Soup Recipe

  1. Bring water to boil and put noodles and seasoning (soup base) into boiling water.
  2. Cook noodles for 2 minutes.  Then throw in an egg (if you like) and any leftover vegetables from your refrigerator and cook for another minute.
  3. Put it in a bowl and enjoy.

Dry GreeNoodles Cooking Directions

  1. Bring water to boil and put noodles in boiling water (without seasoning).
  2. Cook noodles for 2 minutes.  Then add any desired vegetables (mushrooms, greens, carrots, etc.) and cook for another minute.
  3.  Place noodles and vegetables in a bowl and add 2 teaspoons of Kewpie Deep Roasted Sesame Dressing and, if you like your noodles spicy, a dash of Lao Gan Ma Hot Sauce.
  4. Stir well and enjoy.
